The pass (expeditor): Served and Collected
The screen at the pass, where one person checks each order and hands it over, with Collected and Call again.

The pass is the kitchen display where one person puts each order together and hands it to the guest or the runner. It follows the cooks' screens by itself, and tells the Order board when an order is ready and when it is collected.
Before you start
- In the back office, a station is the Expeditor / pass, and this screen ticks only that station (Kitchen, Stations). See Kitchen Stations: screen, pass and bump slips.

- Cooking: orders the cooks have not finished, with how far along each is, such as 2 of 3 ready. Nothing to press here.
- Ready – waiting for pickup: orders every cooking screen has done, oldest first. The Order board shows them as Ready.
- 📣 Call again: the Order board calls the number once more. Only for an order the board shows.
- ✓ Collected: the guest has the food. The order leaves this screen and every Order board.
Hand over an order
- Wait for the order under Ready – waiting for pickup.
- Check the food, and give it to the guest or the runner.
- Press ✓ Collected.
- The guest is not there? Press 📣 Call again.
When the expeditor presses Served
If the station is set to The expeditor presses Served, the pass shows each round of ready dishes as a ticket instead, with ✓ Served.
- A ticket shows here when a cook marks its dishes ready.
- Check the dishes, then press ✓ Served. The order turns Ready on the Order board.
- It waits in Waiting for pickup along the bottom.
- Press ✓ Collected when the guest has it, or 📣 Call again.
An order leaves Waiting for pickup after 60 minutes, collected or not.
If something goes wrong
- Nothing ready to serve.: no cook has marked a dish ready yet.
- Nothing waiting for pickup.: every order has been collected.
- The pass shows the cooks' tickets: in the back office, tick only the pass station for this screen.
