Convert held sales and pay
When the customer comes back, turn their hold sale into a bill of today and take payment.
A hold sale is a bill kept for a customer: not paid, and not a sale yet. When the customer comes back to pay, you convert it. It becomes a new bill of today, and you take payment as for any bill.
