Take a deposit and keep the order
Take a deposit on an order for another day, keep the order without cooking it, and seat it on the day.
A customer orders today for another day, such as a birthday dinner, and pays a deposit. You keep the order with the deposit: nothing goes to the kitchen and it is not a sale today. On the day, you seat it, cook it and take the rest.
