Wastage adds up what was thrown away: spoiled, dropped, expired. Each posted wastage slip is valued at the shelf's average cost when it was posted, and set beside what the sales used on the same days, so you can see waste as a share of use.

The trim a recipe expects (its wastage %) is already inside Consumption, and is not counted here.

Before you start

Open Wastage

  1. In the back office's menu, click REPORTS, then Other Reports, then Stock.
  2. Click the Wastage tab. It opens By item, on Today and All outlets.

The report, part by part

Wastage by item over the last 30 days.
  1. The title and its line: the slips are valued at the shelf average; the recipe's trim is not counted here.
  2. Group by: By item (where it opens), By reason or By slip.
  3. Slips: how many wastage slips were posted, and under it how many lines.
  4. Thrown away: what the wasted stock was worth, at the shelf's average cost when each slip was posted.
  5. Consumed by sales: what the sales used on the same days, at the same outlets, as Consumption counts it.
  6. Waste as % of consumption: Thrown away as a share of Consumed by sales. When nothing was consumed, it shows — and says nothing was consumed on these days.
  7. The heading: how many items. Export CSV gives wastage-by-item.csv.
  8. Item: its name. Click it to open its stock card.
  9. Slips: how many slips it was on.
  10. Lines: how many slip lines.
  11. Qty: how much was thrown away, in its unit.
  12. Value: what it was worth.
  13. Last: the business day of its latest wastage in the range.

On All outlets, a By outlet panel shows each outlet's Slips, Thrown away, Consumed by sales and Waste %.

By reason

Choose By reason in Group by to see why stock was thrown away. Each reason is a row: Code, Reason, Slips, Lines and Value, the biggest value first. A slip with no reason is under No reason given, in grey. Export CSV gives wastage-by-reason.csv.

By reason: the reasons, biggest value first.

Slip by slip

Choose By slip to list each posted slip: Doc no, Date (on the slip), Business day, Reason, Lines, Qty, Value, Posted (when, and by whom) and Remark. On All outlets, an Outlet column comes first. Export CSV gives wastage-by-document.csv. To see or amend a slip, open it in Stock Documents by its Doc no.
